Scotty Dogs started with a simple, slightly unhinged idea: what if the hot dog actually delivered? Not the gas-station kind. Not the boiled-and-bunned afterthought. A real one — built right, dressed weird, made to be the thing you talk about for the rest of the week.

Our base dog is one-third pound of rich beef with cooked pieces of bacon inside the natural casing. That's the canvas. Then we get loud about toppings — pulled pork and slaw, jalapeño bacon cream cheese, beef chili and government cheese, guac and cotija. If it sounds like too much, that's the point.

We also slang Basque chorizo — a nod to Boise's deep Basque heritage — and a couple of smashburgers when the mood strikes. Locally owned, irreverently run, allergic to playing it safe.
